The details don't all fit, but I'll throw out: "The Valiant Red Rooster"?

maybe! that DOES sound a lot like it! I was thinking the story I remembered was kinda like "Five Chinese Brothers", and "The Valiant Red Rooster" also sounds a lot like "Five Chinese Brothers".
I will try to find a copy of "The Valiant Red Rooster" and see if it matches my weird half-memories...
Ah, but "The Valiant Red Rooster" was first published in 1995, which would be over 10 years too late for it to be the story I remember...
Yeah, I thought that might be a deal breaker, but worth a shot. good luck!
I know this is an old post, but if you're still around, this might be a story I've been looking for too. I don't remember the gizzard detail, but by any chance was the duck going to "the king" to get it's "money back?"
I remember that being a recurring rhyme when each character was introduced. Something like "Quack, quack quack, I'm going to the king to get my money back." Then, during the final confrontation he was like, "Quack, quac, quack! I want my money back!"
