I was afraid these walnut sugar cookies wouldn't be strong enough to support ice cream, but it turns out my downfall was making this frozen honey cream instead of actual ice cream. So I just crumbled some cookie into a bowl of ice cream. The honey flavor overpowers everything else, but both items are good on their own.
I love how you took a classic like an ice cream sandwich and deconstructed it. Great job it elevates it a lot and allows people to choose their ice cream to cookie ratio.
