Recipe. This was easy to make and really tasty. Reminiscent of corn bread and the vanilla gives a nice sweetness. Small eggs aren't a thing here, so I just used egg yolks (saving my whites for buttercream) but i think it would be just as good with whole large eggs. Last time I made an egg-stuffed muffin it was so dry. These are moist.
