Just like the title says: What's your go-to recipe that you can bang out on a lazy day when you don't feel like putting a ton of effort into making something?

Carbonara for me (I'm italian). You can make it with ingredients that are readily available, don't spoil and can be freezed with minimal impact on flavour. You can make it in the time it takes pasta to cook, always tastes great, and can substitute a whole meal.

Caprese salad! No cooking and feels light and fresh. Though cereal is truly the ultimate lazy-day meal.

If I'm feeling realllly lazy, make some rice and then mix in pieces of sardines and soy sauce

Chicken with orzo and olives. It's a one pot meal so there's minimal dishes, and if I'm really tired I'll skip browning the chicken and just toss everything in.

It's worth browning the chicken and sauteing the aromatics if you can manage it though. I also like to add a block of frozen spinach (approx 1 cup) to the mix for some extra veggie.

It's a truly lazy meal but it's easy, fairly healthy, and tasty.

Raman noodles with some eggs and precooked frozen shrimp. It's done in a few minutes after the water boils.

A Korean soup called doenjang jigae. So easy, so good. I make mine spicy, so purists may argue it's not technically doenjang jigae.

Grilled cheese and tomato soup are usually pretty quick. Quesadillas too. Really just any.combination of melted cheese and bread lol

Pardina lentil stew with chorizo and vegetables in the pressure cooker. If I think of soaking white beans the night before I use those instead of lentils.
