I love making my own hot sauce. And I put it on everything. I like the red chilli's I find in the Mexican market. I don't like the smoked chipotle like peppers, but any other type of dried pepper I will use- with a lot of lime and garlic. I could drink it it's my favorite.

Making your own sirracha mayo! You can adjust exactly how much spice you want in it. Or add in other flavors as desired... I once had to do a Gochujang mayo when out of sirracha, it was different but still good.
