Yes, but it shouldn't be relied on, as individual Instance owners can do whatever they want. Including stop things from being deleted.
I think as on fresh install it's auto set to delete after 30 days though each admin can change that. Correct me if I'm worng.

Post that are deleted are only hidden it seems. Hidden/deleted posts might be automatically purged after a set time but cannot find reference for that in the documentation.
