Going Down has been one of my favorites. Unique level design with an elevator theme and a surreal twist. Works with brutal doom but can be very difficult at times.

Sunlust ftw. Gorgeous maps (especially E3 maps) that force you to play outside your comfort zone.
That and Plutonia, just because of Go 2 It, which is a genuinely fun map to play.
My favorite megawads have a sense of campaign progression about them. I want it to feel like it's a new game in 1993, you know? If the first map has high tier enemies in it, I'm out. Unfortunately, those megawads are very, very few.
Saturn X wasn't too egregious, though the monster counts are pretty high. The episode 1 remake for molecicco's Doom64 CE is interesting.
