I just did a whirlwind tour of all the nearby Asian shops. So many mysterious ingredients, including a bewildering array of dried fish products. I had no idea before today that fish powder exists.
A question for dumpling affectionados; what's your favourite dipping sauce? I've got a bunch of dumplings and similar foods for a lunch tomorrow and need to make up some dipping sauces to serve with them.
Bought I love the poonsin viet spring roll sauce. Or hot XO. Otherwise a similar one is sugar syrup, reduced orange juice& chilli. Or soy with sesame oil. Plum is pretty good. As is a really hot chilli paste cut with good old dead horse and a dash of lime.
Can't go wrong with chilli, soy and mirin. Add chopped spring onions or sesame seeds if liked. Also, plain mayo is pretty good too - okonomiyaki vibes. Since I was gifted with the bottle of pomegranate molasses, I've been using that in dipping sauces instead of mirin and it sure packs a punch. Might have to find another bottle when this one runs out. Aldi sells a balsamic vinegar-based fig glaze that makes a nice dipping drizzling sauce too.
I need a new pillow but I am confounded by the sheer choice. How does one go about actually choosing the right pillow in this year of our Lord 2024?
With so many dipping sauce ideas it was hard to make a choice, so I ended up making 4. I have a vinegar & ginger, vinegar soy & chlli, spring onion oil, and a gyoza sauce recipe that included pretty much everything - vinegar, soy, chili, garlic, ginger, spring onion, sesame seeds and sesame oil.
I also decided to make some satay sticks, so I also have a peanut sauce to go with them. The sauce worked out really well, I may be tempted to dip all the dumplings in that too!
It all took a bit longer than expected, but It's all done now - including a birthday cake for desert (plain vanilla) and I made a small extra cake so I'm enjoying a slice of that before bed.
