I would look for a dealer option PDF for each year. They should have a table of options for that year as well what trim has those options standard.

I’d just Google something like “2020 Mazda 3 review” and then find like a Motortrend or Car and Driver review. They usually are pretty good about posting what’s changed on yearly trim levels in their reviews.
Not a perfect solution, but I used a combination of Edmunds and archive.org to piece together the differences. Couldn’t imagine doing this for multiple years/trims, so other solutions are also welcome!
The one thing I recall is that the infotainment system was overhauled a bit to have a wider aspect ratio and all touchscreen functionality was removed (which is probably a good thing imo).
As another poster suggested, your best bet is to look up the reviews for that model
