This has little to do with reddit though, other than they being the target.
These companies might just as well go after owners of fediverse instances, and would likely have more luck, as Lemmy owners won't have the same resources as reddit to fight it in a court.
The Netherlands would be a better place to host from. I wouldn’t host anything in China unless I was completely fine with the CCP having access to the data. Their data privacy laws suck, and are designed to more or less allow the CCP total access to everything if they really want it.
Not even the big instances like LemmyWorld or Beehaw would be safe. Even more for self hosted instances.
