Day trip from Hong Kong Island recommendations - Tung Ping Chau, Sai Kung, or anything else? (self.hongkong)

Planning a day trip for 1 July. I've already been to Lamma Island and Lantau Island, although I could revisit them I suppose. Was thinking of doing a day trip to Tung Ping Chau or maybe Sai Kung, open to other recommendations. I"ll be travelling by myself. Alternatively i'd like to see a museum or fort. Thanks!

... to go hiking? Expect weather to not comply as there will potentially be rain / thunderstorm throughout the day. Weather permitting any of the outlying islands will be nice and crowded tomorrow as it is a holiday on July 1
