For instance, Assassin’s Creed Origins had subtitles turned off by default and 60% of players turned them on.

On for me. It helps me focus on the game's story. Especially since having Covid, it's gotten noticeably worse. Enough to make me think I may have adult onset ADHD. Reading and hearing a story helps me stay engaged.
