The original FF7 is great, and the Steam version is compatible with mods if you want to get updated models/FMVs/etc. Without those the graphics are a bit dated. It was designed for the PS1 era and the Steam release is basically just the 1997 PC version with a new wrapper.
I enjoyed FF7 as my first entry into the Final Fantasy series. It is quite different in terms of combat from the Remake, but the underlying Material/ATB systems are very similar.
Haven't installed them personally (got other games in my backlog) but I have looked at some of the mods like "7th Heaven" and yeah the graphics look a lot better in the videos I've seen
I remember installing one that used AI upscaling for the backgrounds, and it's worth checking out for sure. Can't remember what it was called though....
I played through FF7 and FF8 years ago using the PS Disc Version and the shaders made them look much better than the original system
