They specifically say that they haven't compared a "processed" food plant-based diet, and it wouldn't really be useful in this context unless you're referring specifically to stuff like "clean-meat". Due to the scale of processed foods fabrication, the emissions may be be similar or even lower - for example: it could require less energy without cooking and it could require less energy without refrigeration, but these are deeper aspects that can't easily be modeled.
