Linux is a family of open source Unix-like operating systems based on the Linux kernel, an operating system kernel first released on September 17, 1991 by Linus Torvalds. Linux is typically packaged in a Linux distribution (or distro for short).
Distributions include the Linux kernel and supporting system software and libraries, many of which are provided by the GNU Project. Many Linux distributions use the word "Linux" in their name, but the Free Software Foundation uses the name GNU/Linux to emphasize the importance of GNU software, causing some controversy.

I quite like testing, I agree that for desktop use it's fantastic, but stable has been a real balm when it comes to servers. I don't need the latest bleeding-edge Apache or w/e, I need solidity.
I expect if I were running a computer lab or something, I'd also run stable, just because in large numbers, small problems become big problems.
I consider Debian stable pointless due not getting any software updates in order to be able. Not getting releases of new versions also means vulnerabilities. I know stable gets security fixes, but programs still get out of date.
For better stability and also updates, Devuan is the only way to go, and Devuan testing is the best. I refuse to install Debian, only Devuan.
Debian stable does get security updates.
