I had read that some countries governments have access to app users shared data despite what it says under app details in Google Play Store.

I have some really good apps that I think I'll probably have to shed. Please advise. Thanks.

I honestly don't think it matters at this point. The company that publishes the app has all of your data. Almost any big publisher will sell all of the data they collect. Once it is sold, it can be resold. Even if it isn't sold, high profile hacks are dime-a-dozen these days. Assume anything you put into an electronic device will, eventually, make it's way into an open database someday.
