Is there a potato base in the pirogies or are they just jalapeño and onion?

Potato based. I do cheddar, Greek yogurt, onion powder, garlic powder, and salt with my base potatoes. The jalapeno and onion are just the "extra" flavor. Also made a bunch of bacon and chive but those will be frozen for another day.

Great tip with the Greek yogurt.

Last batch I made, I rolled the dough too thin and they exploded in the boiling water so I had to cook the whole batch by steam/frying them like you’d do for gyozas.
