I was also upset about the babies becoming literal babies. They have great bastard energy and it would have been fun to see them on the level of the others. Especially with fusion.
Here is my personal head canon. Gomah doesn't seem to know about Saiyans. If he had only observed Earthlings he would be right in assuming they are much weaker as children. Unfortunately for him this isn't the case with Saiyans. However, I do believe it will be a setback for them. I don't think their smaller bodies can contain the explosive levels of energy they reach in Super
It's a setback for sure. However, if they still have all their techniques, ki control, muscle memory and so on, they only lack in physical strength. Which should be the easiest one to train - like, just get a few zenkai boosts.
On another note, did Gomah watch the entire Buu arc or only the stuff that was shown to us? If he saw everything, he'd know about the Hyperbolic Time Chamber, throwing a wrench into his plan. Depending on the cooldown between uses, they could be back to their original age in about a month to a year. Assuming they will still age.
Of course, I don't actually mind if none of these things are addressed, as long as the overall adventure is good. After all, if they want to recapture the original Dragon Ball, it's partly a comedy anime and Gomah doesn't seem to be particulary smart.
That's how I'm looking at it, more of a fun OG Dragon Ball adventure. I was not happy with the first trailer, but after the final one I couldn't wait to watch
They made a point of bringing the power pole back, so I'm thinking it's going to be slightly more than just a minor loss in strength that they could easily overcome. I guess we will just have to wait and see
