In all the Universe, only a few particles are eternally stable. The photon, the quantum of light, has an infinite lifetime. Or does it?

All of the electromagnetic radiation that exists in the Universe is made up of photons, and photons, as far as we can tell, have an infinite lifetime.

Given that there are so many ways to create photons, you’re probably salivating for ways to destroy them.

As I understand, it is the opposite. As photons move at c, time does not pass for them - they do not age. From the pov of the photon, it is created and destroyed simultaneously. Even thought we observe it to take time to travel through space. Per special relativity.
