Normally I stick with MG kits because they're large enough to both be easy to work with and have a lot of detail and color separation. But I have gotten HG, SD, and RG kits before when a specific kit catches my eye (case in point, RG God Gundam). Really, it just comes down to what you've got room and motivation for. Gunpla is freedom, after all.
As for moving, well, when I drove from Seattle to San Francisco a few months ago to visit family, I also took a bunch of Gunpla with me for storage. I didn't actually do anything special, just tossed each kit back into its respective box (with partial disassembly as necessary to fit), although I also put some of the smaller boxes inside larger boxes to save some space. A cursory check after the drive didn't turn up any damage, and this was with me taking the 101, which has quite a bit of winding cliffside and mountain stretches. I think that as long as whatever containers you store the Gunpla in aren't sliding around willy nilly, and the Gunpla themselves have something separating them so that they can't directly come in contact with each other, you should be fine.
