You should absollutly give a chance to Vindland Saga. In my opinion, its very mature story with a lot of great characters, extreamly good music and great plot. Anime has great animation, season one is from WIT (AoT first seasons, Spy x Family), second season is from MAPPA (Jujutsu Kaisen, Chainsaw Man, last AoT season) so top studios.
Second, you should check Cyberpunk Edgerunners, its awesome and very good proposition for not hard core anime watchers.
Both are on Netflix.
