If you want to, you can mess with the tannins and acids. There's Stormbeforedawn, Man Made Mead, and Dointhemost on YouTube that help with learning how to use them.

Hell yeah. Dry Ciders are my favorite! I have a Dry Hopped Cider (Bru-1 hops) on tap right now. I wasn't expecting it to add much of a pineapple flavor to it but those hops did.
Yes! I second that yeast along with the Windsor British Style Ale Yeast. Had a pack and decided to try it out and it turned out pretty damn good.
