I don't think you can change it right now but I'm sure that'll come in an update someday. Until then I'll probably just stay on the website unfortunately.

Now, I'm very new here too but maybe I can provide a little insight.
I tried to login on multiple instances before I realized I can only login on the one I signed up for. But if you got to the main page on where you signed up, you should see a toggle, subscribed/local/all. Select all and it's the equivalent to r/all I think. You can also search communities (subreddits) both locally and under all (which is federated) here a link make sure it says all on top if you want to search all instances.

Do you have any data redundancy? Like that if a hard drive dies? Or worse a hurricane takes out your whole server? What would happen to my newly created account?
There's quite a steep leaning curve to this website. But it seems worth it.
That seems to tell you what instances are linked, but how do I know what was blocked or was there just no blocked instances? I'm still so lost here. Lol
