For lemmy I would suggest keep hosting it on the vps tbh, some trouble that can come with federation of several servers if hosted from your home network.
I use a vps to host lemmy for multiple reasons, rest of things I selfhost though, even dns for most of my domains (Exception of the domain for lemmy)
Proxmox is nice, xcp-ng works I suppose, even though its a bit... niche thing 2TB disk limits though
Even the very few things that I hosted that required Windows... I actually hosted through Wine just so I could skip running a windows server...
To be fair thats pretty much the IT gig in general, not the docker part but the rest copy/paste run commands, then learn from whatever you screw up couple of years later you might very well end up working in IT
5th June there was about 58k total users lemmy/kbin combined I think, now there is about 320k if not more
Used it quite a bit, and I overall like it, have earned a couple of TB upload because of it.
