What a delightful snack!
I don't use recipes when I cook and adjust based on taste but I'm sure you can find an easy recipe if you google the title.
I cooked the rice cakes in a frying ban in water until they were soft. I ended up draining them and rinsing because there was just a little too much starch.
The sauce is gochujang, soy sauce, rice vinegar and corn syrup. Sometimes people use ketchup for the sweetness, or just sugar. Sesame oil is also a common ingredient and it does add a nice earthiness, but I am avoiding oil.
This looks so wonderful. There is something really special about the combo of creamy polenta and tomato sauce and I am sure the tofu added another beautiful dimension.
I know most of the point of this community is to post normal, every day food but this really is something special.
My daily breakfast is 10g quick oats, 3 tbsp hemp hearts, 1 tbsp chia seed, 1 tbsp flax and a bunch of frozen berries. I cover with boiling water and let it sit until it cools. That cooks the oats. I put prepare it in a mason jar and take to work.

I used the Oh She Glows recipe but with no oil and substituted quick oats for the breadcrumbs. Oh, and doubled the seasonings lol.
