Currently have Pi4 4GB running emulation station quite well. Thinking of preordering 5 (4 or 8gb depending on advise from here) and getting into the Pi NAS game, should I swap them round or will I be happier with the 5 as the NAS?

Do you plan on doing anything special with the NAS (like containers) or just straight up NAS storage services?

If you are doing containers, I would probably say get the 8GB and get the 5 and use for NAS.

I'm not sure what you mean by containers I'm afraid. NAS would literally be a player for local videos that I have (homes videos etc)/download.

A lot of NAS that you buy now have "containers" where you can side load apps like plex or jellyfin for your you videos vs just installing on the main rpi OS.

I don't know exactly what your emulation station consists of, but you say its running well...a reason for the 5 as the NAS would be the PCIe capability. I run my NAS over USB on a 4 and it works ok, but you will definitely get better results with PCIe
