The answer to that is either "whatever one I'm drinking right now" (which today is a 2007 sheng that I've stored myself with no special skill or humidity setup whatsoever) or "this one I sampled years ago......" :) I can think of a couple times that someone gave me a small chunk of beautifully aged stuff.. These are people that live in the tropics and all they have to do to age their tea is let it sit wherever.. Or people that travel to China and have connections I guess. (not me!)

When my twins were born, I commissioned two tongs + 2 cakes of tea made from material picked in their birth year. The plan was to give each a tong when they left home and the cakes were for my wife and I to sample each year. It is very good quality tea, but not the best tea in the world; still, the sentimental value and getting to really experience it as it ages has been marvelous!
