I'd be careful doing this, as the sensor could pivot. I had a mount that did this and I felt like I was constantly having to mess with my Z offset

Agreed, a single screw is generally not ideal. My previous mount (which I cut off the second screw because it was interfering with my fan duct) had this issue. I also needed to recalibrate Z offset very often.
This mount goes around the mounting plate and restricts movement towards the nozzle. The holes for the screw are just big enough for the screw to also grab there, resulting in a rock solid mount - since using the mount, I had none of the Z offset inconsistencies anymore.
