Cowboy Bebop I think
Another opportunity to plug Hajime No Ippo.
It's a boxing anime/manga that stays somewhat true to the sport, fulfills everything on the list, and avoids the standard "chosen one" trope. Everything Ippo gets he works for, and while there are some questionable matches, the story is pretty damn good.
The manga is also still going, decades later. If Madhouse decided to pick HNI up again it'll probably be 500+ episodes to get to today, so plenty of content.
I don't really care about that, but can we skip:

the over-powered protagonist with the cunty or non-existent personality only teenage boys can relate to

the love triangle that has nothing to do with the plot, and never goes anywhere

trying way too hard to be deep, with lots of oblique references to Plato or crucifix-shaped explosions

trying way too hard to be quirky, often in the form of 'it's a slice of life comedy series where everything is wholesome and everyone just takes it for granted that one girl fights crime by punching people with her magical tits'

the vague-arse, borderline mystical ending that is probably just another metaphor for State Shinto again, and completely fails as a resolution to the plot
