Description: Tiki culture is a celebration of tropical escapism. It's a longing for the time when Pacific islands were still exotic locales that inspired Donn Beach and Trader Vic to create their own versions back home. It all started in 1934 with the first Don the Beachcomber tiki restaurant, and was rejuvenated in the mid-90's with the printing of The Book of Tiki by Sven Kirsten. Pull up a chair, sip your Mai Tai, and study the tsantsa-covered ceiling while listening to the sounds of the Hukilau.

As close as I could get to Don the Beachcomber's Zombie with what I had on hand, based on this recipe: https://www.liquor.com/recipes/zombie-2/

My version:

  • 1 1/2 ounces Jamaican rum (I did 1 ounce Appleton signature and 1/2 ounce Smith and Cross)
  • 1 1/2 ounces Puerto Rican gold rum
  • 1 ounce 151-proof demerara rum
  • 3/4 ounce lime juice
  • 1/2 ounce demerara syrup + sprinkle of cinnamon (to substitute the Don's mix)
  • 1/2 ounce falernum
  • 1 teaspoon grenadine
  • 4 spritzes absinthe
  • 1 dash Angostura bitters

Shake all ingredients with pebble ice and open pour into mug, fill rest of the way with fresh ice. Garnish with mint sprig and a cherry
