Could somebody direct me to a server that has Collabora working, and maybe 1TB-2TB of disk space? Thanks.

The only thing I found is creating a dedicated instance on a cloud server like Hetzner (expensive and I would need to maintain it).

This might sound errigant of me but couldn't you just self host? It would be way cheaper.

Anyway linode has a one click option: https://www.linode.com/docs/products/tools/marketplace/guides/nextcloud/

If I click on 1-2TB it gets expensive quite quickly. Compared to Google's or Apple's offerings prices there are more reasonable.

That's because you are the product

I generally dislike Linode. They're a big enough corporation to get pushy with you. I'd go for a smaller provider. There are many that offers "storage" VPSs with capacities like the ones you mentioned.

However, I find the performance of Collabora to be a but lackluster. I prefer to just work with desktop office apps and sync the docs themselves. Your needs may drastically differ from mine though, so take this with a grain of salt.
