I feel Alien 3 and Prometheus have grown on me the most over the years, but are still no where near touching the first two films. Also I’ll certainly check out the book you includes, I’ve never read any novels related to the Alien universe.
I always loved Prometheus, even though some of the characters did very silly things. That medbay scene will always stick with me.
I haven't read all of the books, but quite a few. Phalanx really should have been the third film. It's an incredibly good story.
My rating list goes like this.

4 - Alien: Covenant
Alien 3 was bad imo. I tried to watch through it but only got 20 minutes in, till I started jumping ahead through scenes. Then I ended up just jumping to the end to see how it played out. Wasn't a fun movie for me. The CGI alien(s) really took me out of the movie.
I don't remember watching Alien: Resurrection. But from what I've heard, it's one to skip.
