This can happen when latency between the client and server gets too high.
Your browser may be refreshing off the old server data because your upvote is queued but unprocessed by the server side

It only seems to be on memmy, not mlem or lemmy.world on the mobile browser. Although mlem does sometimes tick the count up..and then back down (not all the time), so maybe it's related to what you're saying.
