You can of course just delete your data over and over again, but AS long as the still collect your data you will have to pay for it all the time. It would be way easier just too block tracking stuff using ublock original, chameleon and noscript

About Incogni... To use their service you will have to give them a lot of your personal data which they will use to remove your data from other websites. But if you want to use their service you would need to trust them.
Personally, I don't trust them and I think it is better to start adopting privacy friendly services right away and stop worrying about the data other companies already have on you. Prevent what you can from now on.

Use Firefox with Ublock Origin extension. Available both on PC/Mac and mobile. You can also enable the extension in incognito mode. This will prevent you from seeing ads in your browser.
Incognito mode creates a temporary profile where as soon as you close the window, all cookies and history are deleted in that profile.
However, websites can still collect information about you thanks to your IP address and browser fingerprint.
If you want more anonymity, I suggest using a VPN. Proton VPN and Nord VPN are two very recommended services.

Just block all ad/tracking domains and hopefully your ads will go away. I haven’t seen an ad in ages, but when I did (due to temporarily disabling) they were clearly not targeted.
Why deal with targeting at all when you can completely block them?
I can also recommend the NoScript extension.
It breaks a lot of websites – which you then have to unbreak by re-allowing scripts for certain domains, temporarily if desired – but you end up getting a better feeling of how bad the web has become when you come across places that want to load scripts from dozens or more of different domains. Like, you're intending to tell how many other parties that I've visited this website?
