For travel and animals I would absolutely stick with aps-c. They are lighter weight and smaller, so good for travel, and the crop factor makes the zoom lenses 1.6x longer, so also better for wildlife.
I've probably owned close to 20 different slr bodies. You'll be able to take beautiful photos with any modern camera.
I don't know anything about the specific bodies you listed to make comments about how good their high iso performance is. Compare them at https://www.dxomark.com/camera-sensors and see which one has the best low light performance.
