Aimed at Australians, but anyone really.. I'm about to do the stay upright/pre-learner. I'm early mid forties and obvs need a LAMS anyway. Once I eventually become unrestricted, can I remove the LAMS restrictions on the bike? Is this what is done or do I buy an unrestricted bike?

You'd have to buy a new bike. Bikes are registered as LAMS. It's illegal to remove the LAMS restriction. Plus you won't be able to take out an insurance policy for it if your bike has been modified this way.
