The Grizzly Man set out to prove what you stated and was eaten by bears, just like everyone else who has ever set out to prove that grizzly bears aren't dangerous.

Nobody said bears aren't dangerous. In fact, the whole point of this bear v. man hypothetical is the knowledge that bears are indeed very dangerous.
