I know this can differ from group to group. What are your experiences there?

This will depend strongly on your local academic culture (+applicable labour laws, as another commenter pointed out) and may differ even between PIs in adjoining offices.

The lab where I'm currently doing a postdoc will happily offer co-authorship to technicians who participated in the experimental work. In the lab where I did my PhD on the other hand, I had to fight tooth and nail to put a technician who made a substantial contribution to my research on the resulting paper.
