I think that federated gitlab instances could be a good next step forward for becoming independent from big companies.

At the moment I host a lot of my code to Github because of discoverability, but I do not feel comfortable with depending on Microsoft for this service. Gitlab is a self hosted Git server, but there is no way to federate the instances like on Lemmy. Are there any projects that deal with this?

Well, the instances can be hosted by trustable commercial companies, that you can pay for service. Same thing can be said for Github, how do you trust Microsoft not violating your licenses on private repos with AI learning?

In other case, if you don't want to pay or don't trust the available ones, you can host your own Git server, and your public projects would be discoverable from other federated instances.

The thing about backups still stay, git is easy to rehost to any platform or keep local.
