Anyone know which one of these 1) has overnight cabs and 2) is the most scenic? I’m thinking Chicago to San Francisco would be pretty nice. Or Chicago to Seattle.

Both Chicago to Seattle and Chicago to San Fran are supposed to be absolutely stunning routes.

The Empire Builder to Seattle goes through the high planes and provides extradonary views. But the real showstopper is the California Zephyr. It’s generally considered to be the most scenic route in the entire Amtrak network. It goes right through the Rockies so you’ll get to see things you can see any other way.

If you have a ton of time on your hands, you could do Zephyr to SF, then Coast Starlight to SEA, then back to CHI via the Empire Builder.

All of those trains offer private room options.
