I don't have a ton of experience with guitar pedals, but have you looked at the Empress ZOIA? The ZOIA has stereo inputs/outputs, supports an expression pedal and, based on my experience building patches for it, it shouldn't be very hard to do what you want.
That looks pretty badass. But I think I'm way too ADHD to effectively use something like that.

I tend to gravitate tower pedals and instruments like the Empress ZOIA, that are programmable and versatile: the Critter & Guitari Organelle (runs PureData patches), the ZOIA (runs its own thing), the Monome Norns (runs SuperCollider), the MOD Dwarf (combines Linux plugins to create virtual pedalboards). Now that I think of it, these are almost all computers running Linux (I think the ZOIA is the exception)!
It is very easy to get overwhelmed with possibilities and options, though; constraints are a good thing. I watched Tom Morello's masterclass and in one of the episodes he talks about his pedalboard. He has like only 5 pedals (2 are repeated because he doesn't want to change the knobs on stage), and he talks a lot about how he has learned to make what he has sound good, instead of having his pedalboard be a moving target. It's a really interesting perspective!
I have mad respect for people who can really dig in and make proper use of components like this. The results are generally impressive. I have a Boss RC-5 and honestly struggle with that! The external dual footswitch helps but I need to dig out the manual to pick more intuitive set of functions.
