Full disclosure, this is from The Office: Classic Cocktails which I can wholeheartedly recommend if you're into cocktails.

Ingredients

  • 2 oz gin
  • 1/2 oz lemon juice
  • 1/2 oz lime juice
  • 1 oz heavy cream
  • 1 oz simple syrup (1:1 ratio)
  • 1 egg white
  • 3 drops orange blossom water
  • 1 1/2 oz soda water (cold)
  • Fresh orange peel (optional for aromatics)

Recipe

  1. Combine all ingredients except for soda water in a cocktail shaker.
  2. Dry shake till frothy (about 20-30 seconds).
  3. Add 3 1-inch square ice cubes (or about 6 cubes of standard ice cubes) to the cocktail shaker.
  4. Shake vigorously until the ice has completely melted (THIS TAKES SO LONG. I wrap my shaker in a cloth to insulate my hands).
  5. Add 1 oz soda water to a collins glass.
  6. Add the shaken cocktail to the glass, filling to the rim (some cocktail may remain in the shaker)
  7. Place the glass and remaining mixture in the refrigerator for 90 seconds.
  8. Remove the glass and remaining mixture from the refridgerator and slowly top off the glass with the remaining mixture.
  9. Tap the glass on the counter gently to encourage the mixture to separate and allow the cocktail to settle for 90 seconds.
  10. Poke a little hole in the top of the foam and add 1/2 oz soda water, this should cause the foam head to pop above the rim. (You can use the back of a bar spoon and pour down it).
  11. Enjoy, stopping occasionally to massage your arms.
