Has anyone added an electric igniter to their gas burner, to start or restart by button press their burner? Bolt it to the side, so the igniter is just under where the flame is, and the button is on the leg of the burner. That's just a simple piezo ignitor. It'll work provided the air to fuel mixture is sufficient

Is there a better solution? It would be nice if there was something (not complicated) that would auto restart if the flame went out. I'm just trying to figure out a good option and open to suggestions.

There is no such simple but super capable thing that you are looking for. It is manual piezo, then a large gap, automatic piezo, another large gap, automatic restart ignition.
