Factorio
Minecraft (I enjoy modded a lot but it might be hard to make that work with 8gb of ram depending on the modpack)
Dead Cells
Rivals of Aether
Terraria
Ori (both games)

Also seconding Outer Wilds because that was genuinely one of my favorite games of all time. Don't look up anything about it though! It's one of those games that will get ruined if it's spoiled for you.
