I just bought a '21 Camry SE and the sales guy said it came with Android Auto. I didn't test because i didn't have a USB cable, but I connected to BT just fine.

The next day after the purchase, come to find out it ONLY has Apple Carplay.

So, how would someone go about enabling it? Is it just a software limitation or would i have to get a whole new head unit?

Also, how do i prevent a connected iPhone from taking over the input from Sirius or BT?! I'm on a road trip with my gf and have her phone connected for the map, but it keeps taking over the audio!

New head unit is the answer to all of your questions.

Have you installed the android auto app on your phone? Is your phone OS and apps updated? What does Android auto show when you plug your phone in?

Have you googled the question? Where are you stuck in the explanations you've found online?

Yes, I've updated my app and OS. Checked to make sure the head unit's firmware was up to date. Plugging in my phone only charges. AAuto doesn't start.

I've been told I'd need to replace my head unit to get it, which I'm trying to avoid. I was hoping there'd be a way to hack it to work, because its dumb to not have it when Apple CP is available.
