Just got Tropical Standard and had to try a drink.

5 drops salt solution 2 teaspoons white sugar 3/4 oz lime juice 1/4 oz luxardo maraschino 1 1/2 oz white rum 1/4 teaspoon xanthan gum

Dry mix everything but xanthan in blender. While still blending slowly add xanthan then 142 grams crushed ice. Garnish with cherry and lime wheel.

Perfect for a warm summer day.

Another book to add to my wishlist! I'll have to try this one. I've been experimenting with more frozen drinks and ice cream lately. It's a lot harder to make a good frozen drink than you'd expect. But this one looks delicious!

They really are. But the xanthan gum really helped keep the drink thick and stabilized. But I think a good blender is the most important part. Highly recommend the book though, very in-depth and lots of new techniques to try!
