Let's start with a simple question: what's your favorite fanfic? If you can't decide, maybe break it down: favorite one-shot, favorite long-form (100k+), etc. There's so many great stories in the fandom!

My absolute favorite is Cartographer's Craft. I've loved it since I first read it in 2006 or so, on FanFicAuthors.net. I'm was also fairly smitten by The Refiner's Fire and Time of Destiny around the same time, but I haven't reread those in a while.

For more modern fics, I love To Refuse The Givens, Adorable Violence, and Edelweiss.
