The roasted garlic aoli is so addictive and its not very hard to make. I roasted an entire head of garlic, squeezed it out into a food processor, and blended it with some regular mayo and a bit of lemon juice. Its not "real" aoli but who cares?

Oo great question. I tend to eyeball it, and it kind of depends how strong you want the flavor. Probably 1.5 - 2 cups?
