Rice and Beans with Coconut Milk Recipe
Prep Time: 10 minutes

Ingredients
- 1 1/2 cups long grain white rice
- 1 can coconut milk
- 2 cups chicken broth
- 1 can red beans, drained
- 1 can pinto beans, drained
- 1 chicken bouillon cube, dissolved in broth
- 2 cloves garlic, minced
- 1 tbsp butter
Instructions
- In a large pot over medium-high heat, melt the butter and sauté the minced garlic until slightly golden. Remove from the pot.
- Add the rice, coconut milk, chicken broth, and both types of beans to the pot. Stir to combine.
- Cook uncovered until the liquid evaporates.
- Cover the pot, reduce the heat to medium, and cook for 12 minutes.
- Stir the rice with a large spoon, then fluff with a fork to separate the grains.
- Continue cooking for another 15-20 minutes until the rice is soft.
- Serve as a side dish and enjoy!
