I have about 30 hours in this game. Mostly during early access, but I did go through a new playthrough when 1.0 was released.
The hand-drawn graphics and scenes are very appealing and calming. The core gameplay is pretty simple but addicting. Great for quick sessions where you don't want to think too much. But you still get that "1 more turn" feeling. The soundtrack is above average too; I personally think it fit well with the vibe of the game.
Compared to EA release, the difficultly was radically decreased (it could get annoying in the EA version); my most recent playthrough was on hard and I never had any issues at all (I am pretty comfortable with this game though).
This is not a massive issue, but the game clearly needs a balance pass. Many of the buildings make no sense from a productivity perspective. The underwater building area is borderline broken due to the limited manner in which the cooling mechanic works. The main overland area needs an expansion. The "morale" buildings are currently somewhat useless, there are many different types of "morale" buildings and it would be good if they could be leveraged depending on your strategy.
Micro-management also becomes somewhat annoying in the late game when you have to assign 12 NPCs to jobs every daily cycle. Not sure if this can be addressed.
The devs seem to recognize that they need to deploy a balance pass. They state that they are currently focused on getting the game released on consoles (this is one game where the PC version would not be made worse by a console release) and then they will do a balance pass.
